Food Diary Recipe: Ginger-Sesame Mini Cucumbers

I’m sharing some of my go-to foods as I continue to navigate my abdominal issues. This light snack worked well for me—it sat comfortably, and I really enjoyed the flavor and variety. It was crisp and refreshing, yum!


Sesame-Ginger Mini Cucumber Snack

Ingredients

  • 1 mini cucumber, sliced
  • A shake of toasted sesame seeds
  • A splash of rice vinegar
  • A drizzle of sesame oil
  • A sprinkle of ground ginger

Instructions

  1. Slice the cucumber into thin rounds.
  2. Toss lightly with rice vinegar and sesame oil.
  3. Sprinkle with toasted sesame seeds and ground ginger.
  4. Serve as a quick snack or fresh side dish.
